Zucchini Gratin


3 medium size zucchinis

avocado oil

bundle of asparagus

1 onion

a few cloves of garlic

a cup of cashews

nutritional yeast

salt and garlic powder

1. Preheat the oven to 400 degrees and then slice the zucchini into circular slices, cut the asparagus into thirds, and cut the onion and garlic. 2. Heat oil in skillet, once hot, add in the onion and garlic until cooked. While that is cooking, pulse the cashews with nutritional yeast, salt, and garlic powder in a blender. Once this is done, mix it in a bowl with the zucchini and asparagus. 3. Then add the zucchini slices in a circular formation and place the asparagus around the sides. Sprinkle the rest of the cashew mixture on top and bake for 30 minutes.
