Sweet Potato Nachos


2 medium sweet potato

avocado oil

handful of carrots

handful of cauliflower, frozen or fresh

half of an onion

a few garlic cloves

1 cup cashew milk or plant-based milk of choice

nutritional yeast


1 can black beans

veggies of choice

1 avocado

chopped up sweet potatoes
blended sweet potato


1. Cut 1 sweet potato into thin slices, add spices like paprika, cumin, chili powder, and garlic powder with some avocado oil 2. Boil water and once boiling add in chopped carrots, onion, cauliflower, and the second sweet potato 3. Start sliced sweet potato in air fryer or oven, then once the boiling veggies are soft place them in a blender with cashew or any nut milk, nutritional yeast, garlic, and additional spices 4. Blend until smooth, add spices as you wish 5. Cook beans and veggies of choice on the stove, and once cooked place the sliced sweet potato on the plate and top with your fav toppings!
