Carrot Ginger Soup
Ingredients
4 big carrots
1 1/2 tsp grated ginger
3-4 cloves of garlic
3-4 cups vegetable broth
a cup of yellow onion
1 tbsp of apple cider vinegar
1 tbsp olive oil
nutritional yeast
chili powder
1 tsp maple syrup (optional)

Steps
1. Heat up the olive oil
2. Sauté onions until translucent,
3. Then add garlic
4. Cook for 5 minutes, then add in the carrots
5. After 5 minutes add the ginger, apple cider vinegar, broth, and maple syrup
6. Simmer for 15-30 minutes
7. Once cooked, add all to blender or food processor with spices and blend until creamy
